3/4 cup pot butter (melted)
1 cup sugar
1 teaspoon vanilla extract
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sour cream
4 really ripened bananas
Time to cook it up!
1 Preheat Oven to 350degrees F (175C) and grease a 9 1/2″ x 5 1/2″ loaf pan
2 In small bowl, combine flour, salt and baking soda and set aside
3 Combine melted pot butter and sugar in a large bowl. Add eggs and vanilla and mix well.
4. Stir flour mixture into butter mixture well until smooth. Fold in the sour cream and the bananas. Don’t worry if all the bananas are not mashed as this will leave for yummy bites.
5. Spread evenly into prepared pan
6. Bake at 350F for 55-60 minutes, testing with a toothpick. Cook for an additional 5 minutes each time until desired readiness.
7. Cool in pan for 10 minutes before removing and cooling on rack.
